I’m Mossaraof — a professional cook, food blogger, and the founder of Oven Insights. I spend my days with hot trays, loud fans, and the steady wait for that tiny beep that says the food is done.
I graduated from the Culinary Institute of America, where I learned that great cooking isn’t a miracle — it’s a series of small, perfect steps. A mess signals a lack of care. I carried that discipline from the CIA into commercial kitchens, then to Larrupin’ Cafe, and finally into the home kitchens I test for you every week.
My story with gear starts with a bad oven. It burned one side of every pizza. I had to rotate trays every few minutes. That frustration taught me something important: tools matter as much as recipes. If your gear fails, the food fails — no matter how skilled you are.
I’ve cooked in Chicago. I’ve cooked in Seattle. I’ve seen how humidity changes a crust and how cold air shifts oven performance. Now based in North Acton, London, I still cook like a pro — and test gear like one. My goal is simple: bridge the gap between professional-grade tools and what everyday home cooks actually need.
I do not copy spec sheets. I write what I see, what I hear — and sometimes what I smell (some air fryers stink of plastic on first use; you should know that before you buy). No brand deal changes my verdict. My kitchen tells the truth.
